One way is to do the following:
1 onion, chopped
1 tsp of fresh ginger
1 bunch of dark greens of your choice (spinach, kale, bok choy): rinse and chop
salt and pepper to taste
In a pan, heat olive oil on low to medium heat and add onions. Allow onions to soften 1-2 minutes, then add ginger, allow those to cook for another minute. Add the dark greens, salt and pepper to taste. Cover the pan and allow veggies to steam. Enjoy.
Sometimes, I will also add Mirin (Japenese Rice Wine; about 1 heaping tablespoon) after I put in the veggies for extra taste.
